Germination
Amaranth germinates in 7 to 10 days at soil temperatures between 70 and 85°F, with 75°F optimal. Seeds are tiny and prefer light to germinate, so sow them on the soil surface or press them in lightly without covering. No pre-treatment is needed. Start seeds indoors 4 to 6 weeks before the last frost, or direct sow after frost danger has passed and soil has warmed.

Growing tips
Plant amaranth in full sun and well-draining soil enriched with compost; it tolerates poor soil but produces better in fertile conditions. Water regularly during establishment and dry spells, though established plants are quite drought-tolerant. Thin seedlings to 6 to 18 inches apart depending on variety; leaf varieties can be closer. Fertilize lightly every 3 to 4 weeks with a balanced fertilizer or side-dress with compost. Harvesting
Harvest leaves continuously once plants are 6 inches tall by pinching off the top 2 to 3 inches, which encourages bushier growth and extends productivity. For grain, wait until flower spikes turn brown and dry (usually 90 to 110 days), then cut entire heads and hang in l a dry place to cure for 2 to 3 weeks before threshing. Strip seeds from dried heads by rubbing gently, then winnow away chaff. Store dried seeds in airtight containers in a cool, dry place for up to a year.
